Golden, puffy and eggy. A delicdious side dish that won't make you gag like when you were a kid.
6 tablespoons butter
1/2 pound fresh spinach leaves, chopped
1/4 teaspoon grated nutmeg
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese
1 1/2 cups milk (skim or regular is fine)
4 eggs, lightly beaten
2 slices soft bread (white or wheat), proce3ssed in food processor
Preheat oven to 350 degrees F. Butter an 8" casserole dish.
In a large saucepan, melt butter, add spinach and cook just until wilted. Remove from heat. Stir in remaining ingredients. Pour into prepared casserole dish and bake 50 minutes, or until top is golden and pudding is set. Serves 6.
