Just like my Dad told me not to eat too many of when I was young.
2 cups vanilla wafer crumbs
2 tablespoons cocoa powder
1 cup confectioners' sugar (no need to sift)
1 cup very finely chopped pecans
2 tablespoons white corn syrup
1/2 cup dark rum
In a large bowl, combine crumbs, cocoa, sugar and pecans. Stir in syrup and rum. Shape into one inch balls and roll in a little more confectioners' sugar. Tastes best after they've had a day or two for the flavors to 'marry'. Store at room temperature in tightly covered container. They'll store for more than two weeks. Makes about 36.
