Crispy potato pancakes instead of bread.
6 medium potatoes, peeled and chunked
1/2 cup flour
1 egg, beaten
1/4 cup milk
Salt and pepper to taste
Using the grater attachment on the food processor, process potatoes. Drain liquid from potatoes and place in large bowl (don't rinse). Stir in flour, egg, milk and salt and pepper.
In a large skillet over medium-low heat, heat about 3 tablespoons of vegetable oil. Using a large serving spoon, spoon potato mixture onto surface. Flatten a little. Fry a few at a time until brown and crispy on both sides (you can keep warm in oven). Add more vegetable oil if needed. Enough for 4 sandwiches.
Make a sandwich! There's the obvious corned beef slathered with brown mustard and horseradish - but tomato and melted Irish Cheddar makes for a nice vegetarian sandwich - and even tuna salad works.
