Brown mustard and mayonnaise for dipping sauce
To boil quail eggs, carefully place eggs in boiling water with a slotted spoon. When the water comes back to a boil, cook for exactly 3 1/2 minutes. Drain and run eggs under cold water for several minutes. Carefully peel the eggs under running water. Serve as an hors d'oeuvre with a mustard dipping sauce (equal parts mustard and mayonnaise); slice in half and use in a salad; or fry them sunny-side up in a little butter.
