A tasty combination from Northern Slovenia.
6 large Idaho potatoes, peeled and cut into large chunks
1 teaspoon EACH salt and pepper
4 tablespoons melted butter
12 ounces of cottage cheese
1/3 cup sour cream
1 1/2 bunches scallions, thinly sliced
2 - 3 tablespoons chopped fresh sage
Steam or boil potatoes until fork tender. Drain and add salt, pepper and butter. Toss gently. Transfer to a large serving bowl.
In a medium bowl, combine cottage cheese, sour cream and scallions. Spoon over the top of the potatoes. Garnish with sage. Serves 4 - 6.
