A bowlful of these makes for a healthy and tasty appetizer.
2 pounds Brussels Sprouts
3 tablespoons walnut oil
1/2 cup finely chopped walnuts (I used my mini food processor)
Coarse salt
Preheat oven to broil. Halve Brussels sprouts, leaving the stem on. Place in a large bowl with a little water, cover and microwave for 8 - 10 minutes or until fork tender.
Drain and spread in a single layer on a baking sheet, cut side up. Brush tops with walnut oil. Broil (in center of oven), about ten minutes, or until dark brown and starting to crisp up. Remove from oven, sprinkle on walnuts and salt and return to oven just for a minute, or until almost starting to blackien. Spoon into a serving bowl and serve either warm or room temperature. Enough for about 8.
