Tuesday Night Lobster Mashed Potatoes

Ingredients:

5 large Idaho potatoes, peeled and chunked
Chicken stock (about 2 cups)
4 tablespoons butter, softened
¼ cup heavy cream
1 teaspoon salt
½ teaspoon pepper
1 tablespoon tumeric
2 cups chopped lobster meat
3 cloves garlic, minced
Juice of ½ lemon
Tomato slices for garnish


Recipe:

In a large pot, boil potatoes in half water, half chicken stock about 15
minutes, or until tender. Drain, return to pot and add butter, cream, salt,
pepper and tumeric. Beat with electric mixer until smooth. Keep warm over
a very low flame.

Meanwhile, in a small skillet, cook lobster pieces with garlic in a little butter
just until done (a few minutes). Stir in lemon.

Mix about 2/3 of the lobster mixture into the mashed potatoes. To serve,
place a portion of the mashed potatoes on each plate, top with more lobster
and garnish with tomato slices. Serves 4.
