Rocky Mountain Oysters

Live from a cowboy bar in Carbondale, Colorado.  Nothing like a platter of deep-fried bull testicles at a party.


Ingredients:

Bull testicles

Flour

Black pepper

White pepper

Salt

Your choice of sauce:  Barbecue, horseradish, ranch dressing, hot sauce


Recipe:

Rocky Mountain Oysters can be purchased online, with prices ranging from $7 - $15/pound, depending on how much you buy.  If not already sliced, slice into pieces about 1/4" thick.  Season flour with peppers and salt to taste.  In a deep fryer or deep skillet, heat vegetable or peanut oil until it passes the sizzle test.  Dip 'oysters' in seasoned flour and fry until lightly golden, about 3 minutes.  Do not overcook or they will be tough.  Eat straight up, splashed with a little lemon juice, or with your choice of sauces.  They're really tender, taste a little like chicken liver, and of course, are a real conversation piece.
