Spaghetti-Spaghetti Squash with Artichokes

I love spaghetti squash and I love spaghetti.  Put them together with some tasty goodies and you've got a winner.


Ingredients:

1 spaghetti squash

1/3 pound thin spaghetti

3 tablespoons butter

1 small onion, chopped

1 cup articihoke hearts inn oil, coarsely chopped

1/3 cup sun-dried tomatoes

1/2 teaspoon EACH salt and pepper

1 cup shredded Gruyere cheese (Parmesan is fine, too)


Recipe:

Place squash in a large bowl, pierce a few times with a fork, and microwave 15 minutes, or until soft.  Halve lengthwise, remove seeds, and with a fork, 'shred' the squash.  Meanwhile, cook spaghetti according to package directions.  Drain and set aside.

Preheat oven to broil.  In a medium saucepan, melt butter and saute onions until soft.  Stir in artichoke hearts, sun-dried tomatoes and salt and pepper.  Add cooked spaghetti.  Stuff squash halves with filling and top with cheese.  Broil until cheese is golden brown.  Serves 2.
