Venetian Spaghetti with Melted Onions

..with grated Parmesan and buttered pine nuts.


Ingredients:

3/4 cup olive oil

6 medium onions, coarsely chopped

1 tablespoon dried basil

1 teaspoon EACH salt and pepper

1/2 pound thin spaghetti

3 tablespoons butter

1/2 cup pine nuts

1/2 cup grated Parmesan cheese


Recipe:

Heat olive oil in a soup pot, add onions, mix well and cook one minute.  Turn heat to lowest temperature and let onions cook for about 45 minutes, uncovered.  Stir in basil and salt and pepper.

Cook pasta according to package directions.  Meanwhile, melt butter in a small sauce pan and cook pine nuts until lightly browned.

Drain pasta and add to onion mixture.  Transfer to a serving platter.  Top pasta with Parmesan and pine nuts.  Serves 4.
