A simple pan-fried dish with my latest obsession - black lava salt.
3 tablespoons butter
1 1/2 - 2 pounds chicken tenders
1 tablespoon black pepper
2/3 cup orange juice concentrate
About 2 teaspoons Icelandic Black Lava Salt
Melt butter in a medium skillet. Lightly brown chicken on both sides, seasoning with black pepper. Pour on orange juice concentrate and let simmer about five minutes, or until orange juice is reduced. Transfer to a serving platter and sprinkle black lava salt on top. Serves 3 - 4.
