All the flavors of a clambake in one pan.
8 pieces bone-in, skin-on chicken (legs and thighs) OR 4 chicken breast halves
2 sweet potatoes, peeled and cut into chunks
8 medium red potatoes, cut into chunks
1 small bottle of clam juice
2 cans minced or chopped clams, juice and all
1 teaspoon EACH salt and pepper
4 tablespoons cold butter, cut into small pieces
Good bread
Preheat oven to 400 degrees F. Arrange chicken in a large roasting pan. Place sweet potatoes and red potatoes all around. Pour clam juice and minced clams over the top. Season with salt and pepper. Arrange butter pieces on top. Cover with heavy foil and bake 50 minutes. Remove foil and bake 20 minutes more. Serve with bread for dipping. Serves 4.
