Margarita Mahi Mahi

A clean out the refrigerator recipe using margarita mix for an amazing glaze for mahi mahi.


Ingredients:

2 pounds mahi mahi fillets (about 4 pieces)

Olive oil

3 teaspoons EACH salt and pepper, divided

2 1/2 cups bottled margarita mix (non-alcoholic)

2 tablespoons hot sauce

2 tablespoons butter

2 tablespoons cream


Recipe:

Preheat oven to broil.  Place fish in a lightly oiled roasting pan.  Use half the salt and pepper to season one side.  Broil 12 - 15 minutes.

Meanwhile, make sauce:  Pour margarita mix in a medium saucepan.  Bring to a boil and let boil away for about 15 minutes, or until reduced by half.  

Turn fish, season on second side with remaining salt and pepper and place back under the broiler for about 7 - 10 minutes.

When margarita mix is reduced, stir in hot sauce, butter and cream.  Let boil a couple more minutes until thickened.

Arrange fish on a platter and pour sauce all over the top.  Serves 4.
