Only 4 ingredients! Layers of potato, tomatoes, onions and Irish Cheddar cheese.
4 large potatoes, peeled and chunked
2 medium onions, chopped
2 large tomatoes, chopped
About 1/2 pound Irish cheddar cheese, cut into 8 - 10 slices
Preheat oven to 350 degrees. Butter a casserole dish.
Boil potatoes until tender in a large pot. Meanwhile, in a medium saucepan, saute onions until soft. Add tomatoes and cook until almost all liquid has cooked off.
Drain potatoes, return to pot and season with salt and pepper. Assemble casserole: Arrange half the potatoes in the bottom of the casserole dish. Spread half the tomato/onion mixture on top. Place 4 - 5 slices of Irish cheddar over tomatoes. Repeat. Bake 40 minutes, uncovered, or until top is golden brown (I like to broil it for a couple minutes for a nice crust). Serves 4. Goes well with corned beef.
