Patty Cakes
          

Crispy, fried Mashed Potato-Cottage Cheese Cakes embedded with scallions.  With a special guest.


      Ingredients

2 large Idaho potatoes, peeled and chunked

1 1/2 cups cottage cheese

1 bunch scallions, sliced (include a little green)

1 teaspoon salt

1/2 teaspoon pepper

1/3 cup finely chopped peanuts

1/2 cup fine, dry bread crumbs

Vegetable oil for frying

Tomato slices


      The Recipe

Steam or boil potatoes until very tender.  Drain and place in a large bowl.  Mash with the back of a fork or large spoon (do not use electric mixture).  Stir in cottage cheese, scallions, slat and pepper and peanuts.  Form 6 - 8 patties with your hands (about the size of a hamburger).

Heat about 1/2" oil in a large skillet.  Dip each patty in bread crumbs and fry, browning on both sides.  Drain on paper towels and serve warm with a slice of tomato.
