The Perfect Greek Salad
          

A visit to the Greek island of Ikaria taught me how to make The Perfect Greek Salad.


      Ingredients

2 bell peppers, chunked (I like to use orange and yellow)

4 medium tomatoes, chunked

1/2 purple onion, chopped

1/2 cucumber, chunked

2 teaspoons capers

2/3 cup pitless olives

1 tablespoon dried oregano

1 teaspoon EACH salt and pepper

2/3 cup olive oil

1/2 pound diced Feta cheese


      The Recipe

Place peppers, tomatoes, onionn and cucumbers in a large salad bowl.  Add olives capers, oregano, salt and pepper.  Toss well.  Drizzle with olive oil and toss again.  Sprinkle cheese all over the top.  Serves 6.  NOTE:  Some Greek chefs like to also drizzle vinegar over the top.
