Chocolate Saltine Toffee
          

Half candy, half cookie.  Betcha you can't eat just one.


      Ingredients

40 saltines

1 cup (2 sticks) butter

1/2 cup packed brown sugar

1/4 teaspoon baking soda

12 ounces semi-sweet chocolate chips


      The Recipe

Preheat oven to 375 degrees F.  Line a baking sheet (with sides) with heavy foil.  Arrange saltines in a single layer, touching.

In a small saucepan, bring butter and brown sugar to a boil, stirring occasionally.  Remove from heat and stir in baking soda.  Pour over crackers and spread with coat evenly.  Bake 6 - 7 minutes.

Immediately spread chocolate chips over, and as they start to melt, spread with a rubber spatula to cover.  Allow to cool (refrigerate to speed up process).  Break into pieces.  Store, covered at room temperature for up to a week (although that's never happened in my lifetime).
