#Fish on a Stick
I was sitting in a beer garden in Munich and there was this guy grilling whole fish on sticks over a charcoal fire. It was crispy and wonderful and inspired this dish. Instead of one big fish, we'll skewer a bunch of smelt, which are only 3 - 5 inches long.
2 pounds smelt
1/3 cup brown mustard
1 tablespoon coarse sea salt
¼ cup ground walnuts
Defrost smelt and thread 6 or so on each skewer. In a small bowl mix together mustard, salt and walnuts. Brush smelt with mustard mixture.
Place on your barbecue grill over a fairly hot fire and cook until nicely browned, turning once. This will only take about 10 minutes because they're so small. I like to think of them as 'fish fries'. Serves 4.
I like to just eat them with my hands when they come off the grill as an appetizer, but they also look nice on top of a salad.
