Cinnamon-Chili Catfish
          

A fabulous flavor combination!


      Ingredients

    6 - 8 catfish fillets
   Juice of 1 big lemon
   2 teaspoons ground cinnamon
   2 teaspoons chili powder
   1/4 teaspoon garlic powder
   1 teaspoon salt


      The Recipe


 Preheat oven to 375 degrees.  Drizzle olive oil in the bottom of a roasting pan.  Arrange catfish in pan and drizzle a little more olive oil on top.  Pour lemon juice over fish and bake, uncovered, 25 - 30 minutes, or until fish is cooked through and lightly browned. Meanwhile, in a small dish, mix together remaining ingredients.  Remove fish from oven and sprinkle cinnamon mixture over the tops of the catfish.  Carefully spoon some of the pan juices over the top to moisten spices.  Return to oven 3 - 5 more minutes.  Serves 6 – 8.  Suggestions:  For a southern flair, serve with mashed sweet potatoes and a green vegetable.  The cinnamon-chili topping is also great on chicken.
