Walnut-Crusted Salmon
          

An Atlantic salmon fillet, oven-poached in lime juice with a walnut-brown sugar crust.


      Ingredients

1 salmon fillet, about 2 1/2 pounds

1 cup fresh lime or lemon juice

1 1/2 tablespoons black pepper

1 1/2 cups finely chopped walnuts

2/3 cup brown sugar

1/2 teaspoon salt


      The Recipe

Preheat oven to 450 degrees F.  Pour a little olive oil in the bottom of a roasting pan and coat salmon fillet.  Pour lime juice over, sprinkle with pepper and roast 15 minutes.

Meanwhile, make crust:  In a medium bowl, combine walnuts, brown sugar and salt and mix with hands. 

Remove salmon from oven and switch to broil.  Cover the top of the fish with walnut coating.  Spoon pan juices over walnuts.  Broil about 5 minutes, or until nicely browned.  Serves 6.
