Porter Creek Catfish Sandwich
          

Fillets poached in orange butter and served on croissants with chili mayonnaise.


      Ingredients

Olive oil

4 catfish fillets

4 tablespoons melted butter

1 cup orange juice

3 teaspoons salt

1 cup mayonnaise

4 tablespoons chili powder

4 croissants


      The Recipe

Preheat oven to 400 degrees F.  Lightly oil the bottom of a baking pan and arrange fillets on top.  Mix butter with orange juice and pour over the fish.  Bake 30 minutes.

Meanwhile,  make sauce by combining mayonnaise with chili powder.

Remove fish and salt tops.  Switch oven to broil and cook a few minutes more, until tops are golden.  

To serve:  Spread mayonnaise mixture on both halves of croissants and add catfish.  Makes 4.
