Ingredients
1 pound applewood bacon, diced
6 slices pancetta, diced
1 green bell pepper, chopped
1 large onion, chopped
3 tablespoons butter, softened
2 cans baked beans (preferably Bush's)
1 can cannellini beans, drained
1 can garbonzo beans, drained
1 cup dark brown sugar
1/3 cup hot sauce (Frank's is good)
1/2 cup bottled barbecue sauce (Open Pit is good)
1/2 teaspoon ground cayenne pepper
1 teaspoon EACH salt and pepper
2 ounces bourbon (or more)
The Recipe
Preheat oven to 350 degrees F.
In a medium skillet, cook bacon and pancetta until crisp. Remove to a dish. Add bell pepper and onion to the skillet and cook on medium until softened and lightly browned.
Spread butter in a 9" x 13" casserole dish. Add all beans and mix. Stir in brown sugar, hot sauce, barbecue sauce, cayenne and salt and pepper. Fold in bacon/pancetta and onion-pepper mixture and stir in bourbon.
Bake for about 50 minutes. Serves 8 - 10.
