Salted Peanut Butter Cup Cookies
A perfect combination of peanut butter, dark chocolate and salt.
Ingredients
2 sticks butter (1 cup), room temperature
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
2 1/3 cups flour
1/2 teaspoon baking soda
1 1/2 cups miniature dark chocolate peanut butter cups (or chop up regular-sized ones)
Coarse salt
The Recipe
Preheat oven to 350 degrees F. (I used convection bake because I had more than one tray of cookies). Line 2 large cookie sheets with parchment paper (or lightly butter).
Place butter and both sugars in a food processor. Cream together. Mix in eggs and vanilla. Transfer to a large bowl.
Mix together flour with baking soda. Add to dough half at a time. (Dough will be firm - I mix it with my hands). Fold in peanut butter cups. Place heaping teaspoons of dough on baking sheets, 1 1/2" apart. Take each one and dip the tops in salt. Bake about 15 minutes, or until lightly browned. Makes about 45.
